In the vineyard
In the vineyard
Oriented east-west. No irrigation and no fertiliser of any kind. Hand-harvested into small crates, with careful grape selection in two separate stages. Yield of 600 kilos per stremma.
In the cellar
Vinified after the Burgundian model: spontaneous fermentation in open barrels, with the cap of skins punched down into the wine by hand (pigeage). No oenological additives used.
Ageing
Matured in old 500-litre oak barrels for 12 months. Bottled unfiltered and unstabilised. Continues to improve for at least 10 years from harvest - any sediment present is entirely natural.
At the table
Roast vegetables, poultry, Mediterranean cooking, soft cheeses.
Limniona is among the oldest red varieties of Thessaly. The portrait on the label looks back along that same line of continuity.
