In the vineyard
In the vineyard
Single parcel at 380 metres, oriented east-west. Organic and dry-farmed, with no irrigation and no fertiliser whatsoever. Selective harvest by ripeness, bunch by bunch. Yield of 300 kilos per stremma.
In the cellar
Grapes dried on racks in the shade over an extended period. Slow fermentation with 30 days of skin contact.
Ageing
Matured in old 500-litre oak barrels for 18 months. Will continue to develop for at least the next 10 years.
At the table
Game, mature hard cheeses, slow-cooked meats. Decanting at least one hour before serving is recommended.
Archegonos: that which exists from the beginning. The name states the intent - a wine in no hurry, made the way it would have been made a century ago.
