In the vineyard
In the vineyard
Estate vineyard at 380 metres, oriented east-west. Organic and dry-farmed, with no irrigation and no fertiliser whatsoever.
In the cellar
The two varieties are vinified separately and blended after fermentation, so that the acidity of Assyrtiko is preserved alongside the structure of Cabernet.
Ageing
Matures and develops in bottle over the coming years.

Red meat, charcoal-grilled dishes, sharp cheeses.
