In the vineyard
Oriented east-west. Organic, dry-farmed, with no fertiliser of any kind.
In the cellar
Vinified using pre-fermentation cold maceration at controlled temperatures, for maximum aromatic extraction without harshness.
Ageing
Held on fine lees for at least 6 months.

White meats, pasta in cream sauces, grilled fish, medium-aged cheeses.
